Avocado Breakfast Bowls

Servings: ½-1 avocado/person

 Breakfast is the most important meal of the day, right? Kick off your day with avocado, egg, cheese, and bacon all-in-one with this incredibly nutritious breakfast dish. Quick to throw together and easy to bake, you will find this meal will become a favorite for those of all ages.

 

Ingredients:

●      Avocados (quantity depending on how many servings you’d like)

●      Eggs (1 egg/half avocado)

●      Bacon

●      Shredded cheese

 

Directions:

●      Preheat oven to 425 degrees

●      Cut avocados in half and remove pit

●      Using a spoon, remove some of the avocado so that there is enough room for one egg to be cracked inside (we saved excess avocado)

●      Crack one egg into each avocado half

●      Cut bacon into small pieces and sprinkle desired amount on each half

●      Top with sprinkle of shredded cheese

●      Place filled avocado halves on cookie sheet or cupcake pan (we found that a cupcake pan holds them in place better)

●      Bake for 16 minutes

●      Enjoy!
